Puff Pancake with Summer Berries

Here is an elegant, beautiful dish that you would be proud to serve at any brunch or holiday gathering. It's very impressive to look at and delicious to eat, but not as complicated as it appears. Perfect for a lazy summer day or Christmas morning.


Puff Pancake with Summer Berries
Ingredients

  • Summer Berries (recipe follows)
  • 4 tbsp butter or margarine, divided
  • 2 eggs
  • 1/2 c all-purpose flour
  • 1/2 c milk
  • 1 tbsp sugar
  • 1/4 tsp salt
Preparation
  1. Prepare Summer Berries as directed below; set aside. 
  2. Preheat oven to 425 degrees F. Place 2 tbsp butter in ovenproof skillet. Place skillet in oven for 3 minutes or until butter bubbles. Swirl pan to coat bottom and side.
  3. Beat eggs in medium bowl with electric mixer on high. Add flour, milk, remaining 2 tbsp butter, sugar and salt; beat until smooth
  4. Pour batter into prepared skillet and bake for 15 minutes
  5. Reduce oven temperature to 350F and continue to bake an additional 10-15 minutes or until pancake is puffed and golden brown.
  6. Serve pancake in skillet with Summer Berries. Serves 6.
Summer Berries
2 c blueberries
1 c sliced strawberries
1 c raspberries
Sugar to taste
Whipping cream (optional)

Combine berries in a medium bowl. Gently toss with sugar to coat. Let stand 5-10 minutes. Place on pancake and top with whipped cream if desired
